Ingredients:
1 Diced Medium Onion
1 lb of Diced Celery
1/2 lb of Diced carrots
1/2 lb of 1/2″ thick sliced Leeks
4 Ounces Butter
3 Ounces Roasted Garlic puree
1/2 Gallon Beef Stock
1/2 Pound Diced Prime Rib
1/2 Ounce Kosher Salt
1/2 Ounce Black Pepper
1 Tbspn Dried Oregano
1 Tbspn Dried Basil
1/2 Tsp Crushed Red Pepper
8 Ounces Precooked Barley
3 Fluid Ounces Red Wine
Directions:
- Heat butter in a large saucepot until fully melted.
- Add Onion, Celery, Carrot, and leeks. Saute until tender (6-7 minutes) over medium heat.
- Add Red Wine and scrap the bottom of the pot. Reduce the wine by 3/4
- Add the Beef Stock, puree of Roasted Garlic, Meat, and Spices.
- Cook for 1 1/2 hours
- Add the Pre-cooked Barley
